How many times have you dreaded going into the kitchen to make breakfast, lunch, or dinner? You might need a new perspective. Always make sure you measure the cooking oil! By measuring, you will be able to lower the quantity of fat and grease in your foods. You'll want to make sure to only use the amount of cooking oil that you need.

To make slicing meat into thin strips a little easier, partially freeze it. This technique is especially useful for the meat slicing styles typically used in Asian cuisine. When the meat is partially frozen, cutting becomes cleaner as the meat fibers are less likely to tear or stretch. However, be sure to allow the meat strips to thaw before cooking them, for even cooking.

When creating soup and stew, try making it lower in fat content by using stocks that have the fat already removed from them. Also use lean meat and lots of vegetables; this will keep your soup low-fat. As soon as the soup is done cooking, put it in the refrigerator to chill. When the soup is cooled, you will find that the fat will have risen and congealed on top. This will make it easy to remove and discard the hardened fat. For each tablespoon of fat that you remove, you will have removed approximately 100 calories.

To get the most possible juice out of a citrus fruit, place it inside the microwave. Take your lemon, orange, or other fruits and heat it up in the microwave for ten seconds. Subsequent to microwaving, roll your fruits on your counter to help extract the most juice.

If you are just starting out with cooking, consider doing your research at your local library. There are plenty of cookbooks with simple recipes available. Pick out a few recipes to try and decide after it has been eaten if it is a recipe you want to add to your permanent collection. Be sure to be patient as you try these new recipes.

To make your pasta sauce a little better, use some of the water that you cooked your noodles in. Take about a quarter cup of the water and set aside. Put in some of the water when you mix the pasta and the sauce. Starch in pasta water has a thickening effect on your sauce, making it seem creamier.

Head to the store and replace your unused spices every six months. The flavor of spices diminishes if they sit around for too long. If you purchase a new spice but doubt you can use it before the flavor dries up, share some of it with a fellow cook.

If you are making a salad ahead of time, put some thought into how you layer its ingredients. If you don't want to send up with a wilted and soggy mess, put juicy ingredients in the bowl first, and then layer upwards to produce like lettuce on the top.

If making stir-fry, meat must be cut on the bias and sliced thinly. This can take a lot of time and be hard. Take the meat out of the freezer once it firms up (not frozen) then cut at an angle of 45 degrees across the grainy part of the meat.

Try new ways to serve that conveniently frozen corn to your family. If you want a fiesta feel to your corn, put in some onions and black beans, and everyone will love it.

Take care to not overfill your pan when you are sauteing. Too much moisture can cause food to steam rather than saute, affecting the crispness of the meal. Saute at a lower temperature as well.

As you are preparing mashed potatoes for a meal, be sure to use hot, but not boiling milk to stir in with the potatoes. The end result is lighter, fluffier mashed potatoes. Nobody wants to eat mashed potatoes full of lumps.
